鲜食大豆是指以新鲜青绿色豆荚和豆粒作为蔬菜食用的一种大豆,在日本、韩国及我国台湾省普遍栽培,世界其他地区也在不断发展.因其营养丰富,内在品质佳,即可鲜食,又可速冻出口创汇.近年来,江浙等沿海省份鲜食大豆生产迅速发展,仅浙江省萧山市1998年春播种植面积就达6000hm~2,主要销往杭州、苏州、上海等城市,还大量速冻出口,取得了较好的经济效益和社会效益.现将其优良品种与栽培技术简介如下:
