冷饮食品包括各种冰棒,雪糕、冰砖、冰琪琳等冷冻食品和各种汽水、果味水、梅酸汤以及低糖饮料、可乐型饮料等清凉饮料。因其生产加工流程环节多,极易受病原菌污染;加之原料含奶、蛋、糖及淀粉,很适合细菌生长繁殖;食用前又不须加热消毒就直接入口,势必造成冷饮食品卫生管理的困难。现将我市1980~1987年冷饮食品监测结果报告分析如下。资料来源和方法对合肥市卫生防疫站1980~1987年在冷饮食品生产厂和冷饮室进行食品卫生监督采取的样品,按国家卫生标准规定的感官、细菌,理化三项指标进行监测检验,三项指标均符合的为合格份数。分年统计作为监测资料。同时收集合肥市保健牛奶厂和乳品厂的化验室1980~1987年的自身卫生检验中的资料,分年进行同样统计作为自检资料。冷饮食品的卫生检验方法按
