采用羟自由基(·OH)体系检测并研究比较新疆不同产地葡萄树伤流液的体外抗氧化活性。结果表明:新疆葡萄树伤流液具有较强抗氧化活性,特别是对·OH的清除能力较强。不同产地葡萄树伤流液中,和田红葡萄树伤流液对·OH清除率最大为83.35%,是0.01mg/mLVc的2.5倍。阿图什和喀什红葡萄树伤流液·OH清除率分别为57.15%、50.58%,而吐鲁番无核白葡萄树伤流液对·OH清除率与Vc相近;研究还发现,和田红葡萄树伤流液对.OH清除率具有较强的热稳定性。
Hydroxyl free radical (· OH) system was used to detect and compare antioxidant activity of grapevine wound fluid from different areas in Xinjiang. The results showed that the grapevine fluid in Xinjiang had strong antioxidative activity, especially for the removal of · OH. In the grapevine injury fluid from different areas, the highest · · OH scavenging rate of red wine in Wada was 83.35%, which was 2.5 times of 0.01mg / mLVc. The scavenging rates of OH and OH of Ashtree and Kashi red grape were 57.15% and 50.58%, respectively, while the clearance rate of · OH was similar to that of Vc in Turpan aventurine; the study also found that Woten Red Vine Scouring fluid on .OH clearance rate has strong thermal stability.
