核桃仁含有丰富的脂肪、蛋白质、碳水化合物、多种矿物质和维生素,具有滋肺润肠、治疗虚寒咳嗽、腰膝疼痛等作用,是理想的医疗保健食品。近年来,多味核桃畅销市场,现将其加工技术介绍如下。1.选料选择新鲜、饱满、无病虫害、大小和壳厚较为一致的核桃为加工原料,或用10%盐水漂洗选果,去掉空果及病虫果,然后风干备用。2.浸泡去涩将选好的核桃用清水或淡盐水浸泡清洗去涩,每天换水1次,3天后捞出风干。
