醋,古时称为苦酒,又名酢、醯。其味酸苦,性微温。在传统的中药炮制方法中,是一种常用的液体辅料。药物的炮制可以影响药物的归经,通过加入辅料能对人体产生选择作用。醋,味酸入肝经属木。常用于炮制收敛止痛类药物。醋,也是很好的溶媒,能提高某些药物有效成分的溶解和煎出,有矫臭矫味的功能,并可减轻药物毒性。中药炮制用醋,主要有醋炒、醋煮、醋淬、醋拌蒸等几个方面。
