一、脂类过氧化和生物抗氧化剂近10多年来一个新的交叉学科——自由基生物学引起了化学家、生物学家和医学家的极大兴趣,有愈来愈多的证据证明自由基与许多重要的生命现象和疾病有关,例如:细胞老化、癌的诱发和增殖、关节炎和炎症、动脉粥样硬化、缺血再灌注损伤(reperfusion injury)等等.在这些自由基损伤中涉及到的自由基主要有:羟基自由基、超氧自由基负离子、过氧自由基、半醌自由基等.其中最引人注意,研究得最多的是自由基引发的脂类过氧化. 众所周知,多元不饱和脂肪酸(PUFA)是细胞膜的主要组分.PUFA中的烯丙基非常活泼,容易被自由基夺氢而引发脂类的过氧化,这是一个自由基链式反应:
