目的了解北海市市售食品致病菌的污染情况。方法按《2011年食源性致病菌监测工作手册》要求的检测方法,共采集7类10种食品检测7种目标菌。结果 2011年共监测食品7大类10种194份,检出致病菌3种18株,总检出率9.3%,其中副溶血性弧菌检出率最高43.5%(10/23),其次为金黄色葡萄球菌2.9%(5/171),沙门菌最低1.5%(3/194);动物性水产品检出率最高43.5%(10/23),其次为餐饮食品8.8%(5/57),肉与肉制品和即食非发酵性豆制品均为5.3%(1/19);副溶血性弧菌均分布于动物性水产品。结论北海市市售食品存在不同程度的致病菌污染,部分餐饮食品和动物性水产品可能是导致食源性疾病的高危食品。
Objective To understand the contamination of commercially available food pathogens in Beihai. Methods According to the method of “Foodborne Pathogenic Bacteria Monitoring in 2011”, a total of 7 kinds of target bacteria were tested in 10 kinds of 7 kinds of 7 kinds of foodstuffs. Results A total of 194 strains of 10 kinds of foodstuffs were detected in 2011 and 18 of them were detected. The total detection rate was 9.3%. The detection rate of Vibrio parahaemolyticus was the highest (43.5%, 10/23) 2.9% (5/171) for Staphylococcus aureus and 1.5% (3/194) for Salmonella, the highest detection rate of animal aquatic products was 43.5% (10/23), followed by food and beverage 8.8% (5/57) ), Meat and meat products and ready-to-eat non-fermented soy products were 5.3% (1/19); Vibrio parahaemolyticus were all distributed in animal aquatic products. Conclusion There are some kinds of pathogenic bacteria contamination in the marketable food in Beihai City. Some foodstuffs and animal aquatic products may be the high-risk foods that cause food-borne diseases.
