鱼肉是富含胶原的重要食品,它的结缔 组织,软骨组织以及鱼皮中的含氮物质主要 是胶原和黏蛋白。通常所说的“鱼冻”即是胶 原经过加水煮沸成为溶胶后,再冷却变成凝 胶。人的头发、眼睫毛基本是由角质蛋白构 成,其中胶原蛋白质要占90%以上,其含量 不足或缺乏会使毛发脱落变稀,失去光泽。 另外,皮肤的良好贮水状态是皮肤光洁度 好,无褶纹、不过紧过松,富有弹性的重要前 提。胶原蛋白是一种大分子蛋白,在分子结 构上,具有较大的空间,从而能充分维持生 命的“结合水”,保证皮肤具有上述年轻的特 征。同时胶原蛋白还是构成人体肌肉两端的 肌腱和数百条各式各样韧带的主要成分,可 以很好地保证肌肉的健美和骨骼的发育并 使之具有一定的弹性。
