甲醛被世界卫生组织确定为致癌、致畸物质和公认的变态反应源。为了查明丁鱼及其鱼丸制品中天然甲醛的含量水平及其对人体的健康风险,研究了丁鱼及其鱼丸制品的甲醛天然含量,参照CAC的方法对其进行健康风险评估。结果显示,丁鱼甲醛天然含量的平均值为114.56 mg/kg,其鱼丸制品甲醛天然含量的平均值为25.80 mg/kg,急性膳食暴露和慢性膳食暴露均小于相关标准。因此,丁鱼中存在的天然甲醛不会对人体健康造成目前科学水平能检测到的损害。
Formaldehyde has been identified by the World Health Organization as a carcinogen, teratogen and a recognized source of allergic reactions. In order to find out the content of natural formaldehyde and its health risks to human body, the natural content of formaldehyde in Ding fish and its fish ball products was studied. The CAC method was used to assess the health risk. The results showed that the average content of natural formaldehyde in crayfish was 114.56 mg / kg, the average value of natural content of formaldehyde in fish cakes was 25.80 mg / kg, and the acute dietary exposure and chronic dietary exposure were less than the relevant standards. Therefore, the presence of natural formaldehyde in fish does not cause any harm to human health at the current level of science.
