“饮食清淡”是长寿的重要因素之一。中老年人吃素可以长寿。中老年人的消化能力减弱,牙齿退化,油腻的东西吃多了,不易消化。中老年人不但胃肠功能减弱,心、肾的功能也不如青年时期,所以提倡食物清淡、少油腻和少糖盐。西方国家曾经提倡高蛋白、高脂肪、高热能饮食,结果是肥胖
