目的运用低场核磁共振(low-field nuclear magnetic resonance,LF-NMR)技术分析样品检测质量及注水比例对水分子弛豫特性的影响。方法分析不同样品质量(1、2、3、4、5 g)对弛豫时间、峰总面积、峰面积比的影响,确定最佳样品质量;通过测定不同注水比例(0%、10%、20%、30%、40%、50%)对猪肉弛豫特性的影响,分析注水后猪肉中的水分变化。结果样品质量为3 g时,弛豫时间、峰面积比的稳定性较好;随着注水比例的增加,不易流动水的起峰时间显著增加(P<0.05)、峰面积比显著减小(P<0.05);而自由水的起峰时间、峰顶点时间、峰面积比均显著增大(P<0.05)。结论在样品质量为3 g的条件下采样,有利于获得较为稳定的试验结果;将不易流动水和自由水的变化规律应用在注水肉检测方面,可使注水肉的检测更加方便、快捷。
Objective To analyze the influence of sample quality and water injection ratio on the relaxation behavior of water molecules by using low-field nuclear magnetic resonance (LF-NMR) technique. Methods The influence of different sample mass (1, 2, 3, 4, 5 g) on the relaxation time, peak area and peak area ratio was analyzed to determine the best sample quality. 20%, 30%, 40%, 50%) on pork relaxation characteristics, analysis of water changes in pork after injection. Results When the sample mass was 3 g, the stability of relaxation time and peak area ratio was better. With the increase of water injection ratio, the peak time of non-flowing water increased significantly (P <0.05) and the peak area ratio decreased significantly (P < P <0.05). However, the peak time, peak time and peak area of free water all increased significantly (P <0.05). Conclusion Sampling at a sample mass of 3 g is advantageous for obtaining more stable test results. It is more convenient and quicker to apply the change rule of non-flowing water and free water to waterflooding meat testing.
