在古今黄河流域庞大的厨师队伍中,有一些数量虽少但却身手不凡的女厨师,俗称“厨娘”。千百年来,她们同男厨师一道,在传播黄河流域饮食文化,扩大与各民族、各地区之间技术交流等方面都发挥了重要的作用。 黄河流域厨娘的出现历史是很早的。1972年,甘肃省文物考古工作者在嘉峪关发掘出6座魏晋时期的壁画墓,获得彩绘砖画600余幅,其中不少是切肉、揉面、烹煮及表现厨房设备的图像。切肉有时为男子担任,而烹食则基本由女仆掌管。如砖画中有描绘揉面的女子,有跪着蒸饭(饼)的女子,有拨火煮羹的女子,有炙烤肉串的女子等。这表明黄河流域的厨娘在魏晋时期已是饮食生产经营中的骨干。出土于河南
In ancient and modern Yellow River Basin, a large team of chefs, there are some small but extraordinary skill of the female chef, commonly known as “cook.” For thousands of years, together with the chef, they played an important role in spreading the food culture of the Yellow River basin, expanding the technological exchanges with all ethnic groups and various regions. The history of the emergence of the Yellow River cook is very early. In 1972, cultural relics and archeologists of Gansu Province unearthed six mural tombs of the Wei and Jin dynasties in Jiayuguan. They obtained more than 600 painting bricks, many of them cutting meat, kneading dough, cooking and displaying images of kitchen equipment. Meat sometimes served as a man, while cooking is basically dominated by a maid. As in the bricks, there are women who describe kneading dough, women who knead their steamed rice (cake), women who make boiled soup, women who have grilled skewers. This shows that the cook in the Yellow River Valley in the Wei and Jin Dynasties has been the backbone of the diet production and management. Unearthed in Henan
