腐乳是我国传统的酿造食品,已有悠久的历史.北京牌大块腐乳(糖门丁腐乳)以丰富的营养,艳丽的色泽,浓郁的香味,形成别致的风味,深受市场欢迎。该品采用传统生产配方及科学发酵方法,选用优质大豆为原料,利用蛋白质制成豆腐坯,经前发酵、腌制、配料装坛(瓶)、后发酵而成。从原料至成品需用120天左右,成熟的产品外观呈紫红色,内部为杏黄色,方块完整,质地细腻柔糯,味道鲜美醇厚,
