成都餐饮业这几年很红火,美食会所、私房菜馆等高档餐厅有如雨后春笋。由于这一类饮食场所的消费都比较高端,所以对于菜肴出品的个性化也就有了更多的要求。由于当今很多厨师在新菜研发上依赖于对特色食材的运用,所以眼下不光是厨师和老板,甚至连那些餐料供货商也在四处搜寻异地的特色食材。这几年,餐饮市场上流行过的特色食材已经不少了,几乎是每隔一段时间就有新品上市,比如水晶锅巴、越南米网、海底椰、软壳蟹、子姜苗、鳄鱼肚、花生芽、眼镜螺、青麦仁、藕苗、桃油、醉鱼……这里,笔者仅撷取今年蓉城餐饮市场上的一些流行品种来给大家做一个介绍。
