为了比较新、陈大蒜降胆固醇血症的作用,将健康家兔分成对照、胆固醇和新、陈大蒜四组,每组10只。除对照组外,其余三组均喂以胆固醇0.5g/天/只,新、陈大蒜组则分别加喂新鲜大蒜和存放7个月的陈大蒜2g/天/只。结果表明新鲜大蒜有降低膳食引起的高胆固醇血症和减轻主动脉粥样硬化的作用,而陈大蒜则失去了这些有益的作用。在新、陈大蒜喂饲家兔的50天中,均未发现明显的毒性。
