目的分析2015年天河区食品安全风险监测微生物结果,了解市售食品中食源性致病菌的污染情况,进行食品安全风险评估和预警,为制定有效的监管措施提供依据。方法每季度均匀采样,共采集了熟肉制品20份,培烤食品(蛋糕、面包)32份,中式快餐40份,共92份,根据《2015广州市食品安全风险监测工作手册》提供的方法进行菌落总数、大肠菌群、沙门菌、金黄色葡萄球菌、单核细胞增生李斯特菌、蜡样芽胞杆菌检测,并按国家标准进行结果判定。结果在监测的3类92份食品中,细菌总数超标率最高(52.17%),其次为大肠菌群(40.22%)、蜡样芽胞杆菌(5.43%),沙门菌、金黄色葡萄球菌、单核细胞增生李斯特菌未检出。结论天河区大部分市售食品安全风险低,但抽查的3类食品均存在不同程度的污染现象,存在一定的安全隐患,应加强监管。
Objective To analyze the microbial safety of food safety risk monitoring in Tianhe District in 2015, understand the contamination status of food-borne pathogenic bacteria in commercial food, evaluate and alert the risk of food safety and provide the basis for effective regulatory measures. Methods A total of 20 samples of cooked meat products, 32 baked goods (cakes and breads) and 40 Chinese-style snacks were collected on a quarterly basis. A total of 92 fast food products were prepared according to the method provided in the 2015 Guangzhou Food Safety Risk Monitoring Workbook The total number of colonies, coliform bacteria, Salmonella, Staphylococcus aureus, Listeria monocytogenes, Bacillus cereus detection, and in accordance with national standards to determine the results. Results Among the 92 types of foodstuffs tested, the highest total bacterial count exceeded the standard (52.17%), followed by coliform (40.22%), Bacillus cereus (5.43%), Salmonella, Staphylococcus aureus, Listeria monocytogenes was not detected. Conclusion Most commercial foods in Tianhe District have low risk of food safety. However, all three types of foodstuffs sampled in Tianhe District have different levels of pollution and some potential safety hazards. Supervision should be strengthened.
