The prevalence of foodborne illness caused by contaminated low pH fruit juice is on the rise. It has been established that Cryptosporidium can cause foodborne illness (mild to severe gastroenteritis) through contaminated water and fruit juices. Many current apple juice manufacturers are exploring ways of disinfecting apple juice without changing its quality, consistency and flavor. EHV or HHP
