分析石榴渣多酚的成分,研究其抗氧化活性。多酚成分及其含量的分析采用HPLC法,通过测定多酚的总还原力、羟自由基清除能力、超氧阴离子自由基清除能力、DPPH·自由其清除能力和对脂质过氧化的抑制能力五个指标考察石榴渣多酚的体外抗氧化活性。石榴渣多酚提取物总酚含量为237.60 mg/g,从中鉴定出了10种酚类成分,按含量依次为安石榴苷、表儿茶素、没食子酸、咖啡酸、山萘素、绿原酸、芦丁、儿茶素、槲皮素和阿魏酸。抗氧化活性试验表明,石榴渣多酚具有较强的还原能力、自由基清除能力和抗脂质过氧化能力,且呈现良好的量效关系。石榴渣多酚组成丰富,且其中的多酚类物质具有较强的抗氧化生物学活性,其抗氧化能力与其中总酚的含量具有一致性。

The pomegranate residue polyphenols are rich in composition, and the polyphenols therein have strong antioxidant biological activity, and the antioxidant capacity is consistent with the total phenolic content therein.
