江苏泰州,是京剧艺术大师梅兰芳的故乡,此地物产丰富,水产鲜蔬、珍禽野味四季有供,这些都为泰州烹饪的发展提供了丰富的物质基础.不少名菜、名点在省内外都享有很高声誉.1956年春,梅兰芳偕夫人福芝芳、子葆玖率京剧团回家乡祭祖演出,泰州烹饪界为庆贺大师父子回乡演出,特创制了“双凤回巢”一菜,以表达家乡人民的盛情.此菜推出后,很受称赞.此菜现已成为地方传统名菜.1990年被收编入《中国名菜谱》(江苏风味).1992年初,中共中央总书记、国家主席江泽民来泰州视察时,题写了“弘扬民族优秀
