目的了解武威市居民主要食品中8种食源性致病菌的污染状况,为食品卫生监管提供依据。方法依据国家食源性致病菌监测网2010年-2013年年度工作手册进行。结果检测中式凉拌菜、熟肉制品、地方特色食品等样本共1 213件,检出食源性致病菌143株,总检出率为11.79%,其中沙门菌检出率为2.44%(28/1 148);单核细胞增生李斯特菌检出率为1.94%(14/723);金黄色葡萄球菌检出率为5.85%(64/1 094);蜡样芽胞杆菌检出率为11.07%(28/253);阪崎肠杆菌检出率为4.29%(6/140);致泻性大肠埃希菌检出率为1.86%(3/161);志贺菌和大肠杆菌O157∶H7未检出。结论武威市居民主要食品食源性致病菌污染严重,以蜡样芽胞杆菌和金黄色葡萄球菌污染为主,地方特色食品、冷冻饮品和乳制品污染较重。
Objective To understand the pollution status of 8 food-borne pathogens in the main foodstuffs of residents in Wuwei city and provide the basis for food hygiene regulation. The method was based on the National Foodborne Pathogenic Bacteria Monitoring Network 2010-2013 Annual Working Manual. Results A total of 1 213 samples of Chinese salad, cooked meats and local specialties were detected. 143 food-borne pathogens were detected, with a total detection rate of 11.79%. The detection rate of Salmonella was 2.44% (28 / 1 148), the detection rate of Listeria monocytogenes was 1.94% (14/723), the detection rate of Staphylococcus aureus was 5.85% (64/1 094), the detection rate of Bacillus cereus was 11.07 % (28/253). The positive rate of Enterobacter sakazakii was 4.29% (6/140), that of diarrheal Escherichia coli was 1.86% (3/161), that of Shigella and Escherichia coli O157: H7 not detected. Conclusion The main food-borne pathogens in Wuwei City are seriously polluted, mainly Bacillus cereus and Staphylococcus aureus, and local specialties, frozen drinks and dairy products are seriously polluted.
