泡茶最讲究水和茶,茶具其次,至于泡茶的人,只能排在茶具后面。没有好水,好茶不过是树叶。当好茶遇到好水,如同瞌睡的人遇到枕头,水的品性才能流露,茶的韵味才能展现。好茶与好水相遇,类似志趣相投的人相遇,不但需要缘分,还需要适当的温度,以及等待的耐心。时下流行的普洱茶冲泡方法,精巧的,用盖碗,用紫砂壶,嫌麻烦的,用飘逸杯,这些都不是普洱茶的传统。作为压紧茶,开水冲泡难以透骨,加之地处高原,说是开水,其实只有九十摄氏度,于是采用烹煮,有些地方则先烤后煮,方法迥异,但是异曲同工。
