白薯学名甘薯。它的最大特点就是供给人体大量的粘液蛋白——这是一种胶原和粘液多糖类物质,厲于一种多糖蛋白质的混合物,对人体有特殊的保护作用。它能预防心血管系统脂肪沉着,保持动脉血管壁的弹性,防止动脉粥样硬化的发生,并使皮下脂肪减少,避免出现过度肥胖。它还能防止肝脏和肾脏中结缔组织萎缩,预防胶原病的发生,保持消化道、呼吸道以及关节腔和浆膜腔的润滑。此外,胶原和粘液多糖类物质与无机盐类结合可以形成骨质,并使软骨具有一定的弹性。现今日本很重视对做白薯为长寿食品的研究;而我国明代李时珍早已把白薯列为长寿食品了。
