麦芽糖是由两个葡萄糖分子组成的双糖,其分子式为C_(12)H_(22)O_(11)·H_2O,分子量360.31。为白色结晶性粉末,结晶中带一分子结晶水,其结晶水在一般室温下用硫酸或五氧化二磷真空干燥不能去除,加热至100℃才失去结晶水。在20℃时麦芽糖在100份水中的溶解度为:108g,微溶于醇,不溶于醚。麦芽糖熔点108℃(分解),无水物为160~165℃。旋光度[α]_D~(20)为+137.5°~+139.5°。过去麦芽糖主要用于食品工业,在医药方面仅用于制备培养基或比色标准液,间或用作片剂辅料,用量不大,不太为人们所重视。近十几年来,国外用麦芽糖作营养输液的研究颇有进展,但国内报道很少,现将搜集的部分资料介绍如下:
