目的了解济南市零售和餐饮环节,贝类海产品牡蛎和毛蚶中副溶血性弧菌污染水平及毒力基因携带情况。方法 2013年夏秋季节,从市场、餐馆采集牡蛎和毛蚶样品52份,采用多重荧光MPN-PCR法对副溶血性弧菌的污染水平进行定量检测,并对毒力基因(tdh、trh、orf8)携带情况进行调查。结果副溶血性弧菌在牡蛎和毛蚶中的检出率为46.15%(24/52);其中污染水平≥110 MPN/g的样品占33.33%(8/24);毒力基因阳性者有28株,以orf8为主(18株),tdh、trh各5株。结论济南市市售牡蛎和毛蚶中,致病性副溶血性弧菌污染水平较高,提示存在一定的食品安全风险。
Objective To understand the level of virulence and virulence of Vibrio parahaemolyticus in the retail and catering sectors in Jinan City, and in oysters and catfish by shellfish. Conclusion The high level of pathogenic Vibrio parahaemolyticus in commercially available oysters and floss in Jinan City suggests that there is a certain food safety risk.
