目的建立气相色谱-质谱测定植物油中胆固醇的方法。方法油样经乙醇-KOH皂化后,用乙醚萃取,无水Na2SO4脱水,氮吹浓缩,乙醚定容后经DB-5MS柱(30m×0.25mm×0.25μm)分离,GC-MS定量分析。结果胆固醇的浓度在1.62~243μg/mL范围内与峰面积呈良好线性关系,回收率为82.3%~96.4%,相对标准偏差为1.08%~2.87%。结论发现常见植物油中胆固醇含量均﹤20mg/kg,建议制定植物油中胆固醇的限量﹤50mg/kg,为地沟油掺入植物油检测提供参考。
Objective To establish a method for the determination of cholesterol in vegetable oil by gas chromatography-mass spectrometry. Methods Oil samples were saponified with ethanol-KOH, extracted with ether, dehydrated with anhydrous Na2SO4, concentrated by nitrogen, fixed in diethyl ether and separated by DB-5MS column (30m × 0.25mm × 0.25μm). Results The concentration of cholesterol in the range of 1.62 ~ 243μg / mL showed a good linear relationship with the peak area. The recoveries ranged from 82.3% to 96.4% with relative standard deviations of 1.08% -2.87%. Conclusion It is found that the common vegetable oil cholesterol content of <20mg / kg, the proposed development of vegetable oil cholesterol limit <50mg / kg, for the detection of waste oil vegetable oil incorporated reference.
