[目的]了解肥城矿区餐饮具消毒管理状况,探讨科学的餐饮具消毒管理方法。[方法]大肠菌群快速纸片法,按照国标规定方法检测,并将监测结果进行统计分析。[结果]共检测餐饮具1781份,合格1439份,总合格率为80.80%。2003～2007年合格率为71.93%～85.71%,合格率有逐年上升趋势;各年度合格率、不同消毒方法和不同经营类型餐饮单位合格率差异均有统计学意义;几种消毒方法消毒效果比较,以高压蒸汽消毒效果最佳。依据监测结果,明确了餐饮具消毒管理工作的重点,提出了加强餐饮具消毒管理工作的对策。[结论]加强从业人员卫生知识和技能培训,提高从业人员卫生意识,推广餐饮具热力消毒方法,加大餐饮具消毒监管力度,重点加强个体、小型餐饮单位的消毒管理工作,全面提高餐饮具消毒卫生质量。 [Objective] To understand the status of disinfection and management of tableware in Feicheng mining area and to discuss the scientific disinfection management methods of tableware.
