[目的]了解肥城矿区餐饮具消毒管理状况,探讨科学的餐饮具消毒管理方法。[方法]大肠菌群快速纸片法,按照国标规定方法检测,并将监测结果进行统计分析。[结果]共检测餐饮具1781份,合格1439份,总合格率为80.80%。2003~2007年合格率为71.93%~85.71%,合格率有逐年上升趋势;各年度合格率、不同消毒方法和不同经营类型餐饮单位合格率差异均有统计学意义;几种消毒方法消毒效果比较,以高压蒸汽消毒效果最佳。依据监测结果,明确了餐饮具消毒管理工作的重点,提出了加强餐饮具消毒管理工作的对策。[结论]加强从业人员卫生知识和技能培训,提高从业人员卫生意识,推广餐饮具热力消毒方法,加大餐饮具消毒监管力度,重点加强个体、小型餐饮单位的消毒管理工作,全面提高餐饮具消毒卫生质量。
[Objective] To understand the status of disinfection and management of tableware in Feicheng mining area and to discuss the scientific disinfection management methods of tableware. [Method] The coliform rapid paper method was tested according to the national standard method, and the monitoring results were statistically analyzed. [Results] A total of 1781 tableware were tested, passing 1439, the total pass rate was 80.80%. From 2003 to 2007, the passing rate was 71.93% ~ 85.71%, and the passing rate increased year by year. The differences of pass rates, sterilization methods and catering units with different business types in each year were statistically significant. The disinfection effects of several disinfection methods were compared , With high-pressure steam disinfection best. Based on the monitoring results, the focus of the disinfection management of the tableware was clarified, and measures to strengthen the disinfection management of the tableware were put forward. [Conclusion] The training of health knowledge and skills of practitioners should be strengthened, the awareness of health workers should be improved, the methods of heat disinfection of tableware should be popularized, the disinfection and supervision of tableware should be strengthened, the disinfection management of individual and small catering units should be strengthened, and the disinfection of tableware should be improved.
