冷盘以其逼真的造型、精细的刀工、鲜艳的色彩及鲜美清新的口味,博得中外食客的青睐。传统的冷荤拼摆教学,是老师示范一个拼盘,学生观看并模仿,只是停留在照葫芦画瓢的水平上,不能充分开发学生的想象力。在《花篮拼盘的造型》的教学中,我本着全教会的精神,培养学生实践能力和创新精神,发挥学生的主体性的教学原则。在教学中处理好以下几个环节:
