目的了解公共餐饮具卫生现状,以便加强公共餐饮具消毒管理。方法通过现场抽样检测的方法,对呼和浩特市2009-2011年公共餐饮具消毒卫生质量进行了监测。结果连续3年从呼和浩特市1 076家餐饮单位共抽检餐饮具10 732份,平均总合格率为83.34%。大中型餐饮单位餐饮具卫生质量合格率高于小型餐饮单位。结论呼和浩特市公共餐饮单位餐饮具卫生消毒质量合格率普遍偏低,以小型餐饮单位较为突出,需要加强城市公共餐饮具卫生管理。
Objective To understand the sanitary status of public tableware in order to strengthen the disinfection management of public tableware. Methods By means of on-the-spot sampling and testing, the disinfection and hygienic quality of public tableware in Hohhot from 2009 to 2011 was monitored. Results A total of 10 732 pieces of tableware were sampled from 1,076 catering establishments in Hohhot for three consecutive years, with an average total passing rate of 83.34%. Large and medium-sized catering units sanitary ware quality health pass rate higher than small catering units. Conclusion The passing rate of health and disinfection quality of tableware in public catering units in Hohhot is generally low, especially in small-scale catering units, and the hygienic management of urban public tableware needs to be strengthened.
