This article studies the ionization of chitosan and carrageenan as a dilute solution and the interaction between the two. Carrageenan showed a strong acid polyelectrolyte behavior in solution, while the deacetylated chitin showed a weak base polyelectrolyte behavior and decreased with decreasing degree of deacetylation. The dilute solution of chitosan and carrageenan reacts to form a white precipitate that is insoluble in water. Turbidity measurements show that at pH values below 4, the reaction is stoichiometric, indicating that the reaction between them at this time is mainly through the electrostatic interaction and the formation of electrolyte-complex precipitation. When the pH is high, the reaction deviates from the stoichiometric result.
