营养素度量法(nutrient profiling)是以预防疾病和促进健康为目的,综合考量食物的营养成分,对其进行科学的分类或排序的过程。国外学者建立了针对限制营养素、推荐营养素或两者相结合的多种营养素度量模型(nutrient profiling model),用以描述食物对人群健康的作用,通过数值的高低,消费者可以方便地判断哪个食物营养价值更高。我国对营养素度量法的应用仍然较少。本研究对国外几种营养素度量模型的建立和应用进行简要介绍,期望在此基础上,考虑建立适合我国居民膳食营养素摄入和需求的营养素度量模型,为今后更加有效的指导居民食品消费行为打下基础。 Nutrient profiling is a process that scientifically sorts or ranks food nutrients for the purpose of disease prevention and health promotion. Foreign scholars have established a variety of nutrient profiling models for limiting nutrients, recommending nutrients or a combination of the two to describe the effect of food on human health. By numerical values, consumers can easily determine which food Higher nutritional value. China’s application of nutrient measurement method is still relatively small. In this study, we briefly introduce the establishment and application of several nutrient measurement models in foreign countries. Based on this, we hope to establish a nutrient measurement model that suits the intake and demand of dietary nutrients in our country and lay a good foundation for the future guidance of household food consumption behavior basis.
