A research team in Singapore conducted a survey of 11 people who could flexibly use chopsticks, spoons and hand-grabbing meals and found that eating with chopsticks helped to lower the glycemic index. Researchers think this is because eating with chopsticks will make fewer grains of rice picked up than if they were picked up by hand or with a spoon, so chewing is less involved. The most important thing is that eating with chopsticks lengthens the meal time.
