控制农产品有害物质残留的关键技术在于有害物质残留的检测和降解,水果蔬菜中的污染物主要是残留农药、重金属、亚硝酸盐;对农药残留的检测技术及降解方法进行了详细说明;指出了微生物降解农药残留的研究动向是:降解基因的克隆、表达,农药降解酶制剂和固相酶反应器的研制,采用生物降解与其他降解机制相结合的降解系统,真菌对农药的降解。
The key technologies to control the residues of harmful substances in agricultural products lie in the detection and degradation of the residues of harmful substances. The pollutants in fruits and vegetables are mainly the residual pesticides, heavy metals and nitrite. The detection techniques and degradation methods of pesticide residues are described in detail. The research trends of microbial degradation of pesticide residues are: the cloning and expression of degradative genes, the development of pesticide degrading enzymes and the immobilized enzyme reactor, the degradation system of combining biodegradation with other degradation mechanisms and the degradation of pesticides by fungi.
