呼吸作用是动物吸进氧气和呼出二氧化碳气的一种生理表现。它是一切生物维持生命活动的基础。动物停止呼吸就表示生命的结束。植物虽然没有专职的呼吸系统,但也表现耗氧与放出二氧化碳气,并且沿袭呼吸作用这一特定名辞。人们日常生活中需用的粮食都取材于作物的种子。因之原粮是各类作物种子的总称。有萌发力的种子,胚为表现呼吸作用的主要部位。经加工后的成品粮,如面粉与大米在密封条件中也表现耗氧与放出二氧化碳。这主要由于感染了微生物和害虫有关。这些生物也进行呼吸,且强度比种子本身大,所以粮食的呼吸作用是一个笼统的名词,实际是粮堆生态系统的总体表现。在正常有氧的空气中,呼吸作用是以葡萄糖为“燃料”的生物氧化作用。有机物质的燃烧是直接氧化并放出热能。生物氧化是在常温中进行的,通过酶的催化作用完成一系列的
