以 5个鲜枣品种为试材 ,研究枣果实采后成熟衰老过程中生理生化变化规律。结果表明 ,0℃下 5种枣果呼吸变化幅度较小 ,均无明显呼吸高峰出现 ,呼吸强度与枣果耐藏性呈负相关 (r=- 0 .671 ) ;不同枣果间乙烯释放量存在显著差异 ,大荔圆枣、襄汾圆枣、婆婆枣的乙烯释放量显著高于大白枣、金丝小枣 ,乙烯释放量与枣果衰老软化及耐藏性之间无显著相关性。试验还发现 ,随着枣果的衰老软化 ,PPO、PG和抗坏血酸氧化酶活性呈上升趋势 ;V- C含量下降 ,且品种间差异显著 ,其中襄汾圆枣耐藏性最好 ,V- C保存率最大为 83.3% (0℃下贮藏 70 d) ;V- C含量的变化与抗坏血酸氧化酶活性变化呈显著负相关关系 (r=- 0 .791 )。
Five jujube cultivars were used as experimental materials to study the physiological and biochemical changes of jujube fruits during post-harvest maturation. The results showed that there was no significant peak of respiration in 5 jujube fruits at 0 ℃, and the respiratory intensity was negatively correlated with the jujube fruit resistance (r = -0.6671). The ethylene emission There was a significant difference between the two cultivars. The release of ethylene was significantly higher than that of Daizao jujube and Ziziphus jujuba, and the correlation between ethylene emission and age-aging and storage of jujube was not significant. The experiment also found that with the softening of jujube, the activity of PPO, PG and ascorbic acid oxidase increased; the content of V-C decreased, and the difference among varieties was significant. Among them, The maximum preservation rate was 83.3% (stored at 0 ℃ for 70 d). There was a significant negative correlation between V-C content and ascorbate oxidase activity (r = - 0.791).
