晚期糖基化终末产物是人体内的还原糖(葡萄糖)与蛋白质或脂质游离基发生不可逆反应所形成的。晚期糖基化终末产物通过直接修饰蛋白质、脂质、核酸等以及与晚期糖基化终末产物受体结合的方式直接或间接导致动脉粥样硬化的发生和发展。还原糖的生成是晚期糖基化终末产物形成的主要因素之一,采用低血糖生成指数膳食会减少晚期糖基化终末产物的生成。本文从预防医学的角度,综述了晚期糖基化终末产物导致动脉粥样硬化发生发展的主要机制以及膳食因素在预防动脉粥样硬化中的意义。
Advanced glycation end products are formed by the irreversible reaction of reducing sugars (glucose) in the human body with protein or lipid free radicals. Advanced glycation end products lead directly or indirectly to the development and progression of atherosclerosis by directly modifying proteins, lipids, nucleic acids and the like, as well as binding to advanced glycation end-products receptors. The formation of reducing sugars is one of the major factors in the formation of advanced glycation end products. The use of hypoglycemic index diet will reduce the production of advanced glycation end products. This article from the perspective of preventive medicine, reviewed the advanced glycation end products lead to the development of atherosclerosis and the main mechanism of the development of dietary factors in the prevention of atherosclerosis significance.
