沙拉的历史,可以追溯到公元前,亚历山大大帝远征中亚时,创造了一种新的食物,那就是往生的野菜上撒盐直接食用,这可以说是沙拉的雏形。很长一段时间内,沙拉就是单纯的用新鲜蔬菜拌上调料,蔬菜作为沙拉的主体,因而需要配合着主菜一同吃。现在的色拉,无论是选择的素材,调料,烹饪方法都有了新的突破。沙拉也从“生吃野菜”上升为“一个正式的饭菜料理”。
