盐度对缢蛏稚贝脂肪酸和甾醇组成的影响

为了研究盐度对缢蛏脂肪酸和甾醇组成的影响,选择缢蛏稚贝为研究对象,先在盐度13条件下暂养10d,然后分别在盐度8,13,18,23条件下继续培养5 d后采收样品,通过气相色谱质谱联用法(GC-MS)分析稚贝样品脂肪酸和甾醇组成。结果表明:盐度对缢蛏稚贝脂肪酸和甾醇种类没有影响,在各盐度下均检测到24种脂肪酸和9种甾醇;高盐明显抑制缢蛏稚贝的生长和脂质的合成,且每种脂肪酸和甾醇的绝对含量随盐度的增加均不同程度的减少;随着盐度的升高,十八碳以下的多不饱和脂肪酸组成呈下降的趋势,而二十碳以上的多不饱和脂肪酸组成则呈增加的趋势;同时,胆固醇占总甾醇百分含量在高盐胁迫中明显增加。烹煮前、后脂肪酸和甾醇的变化规律大致相同,而绝对含量均有不同程度的减少。测定结果提示,如果让缢蛏在较低盐度下生长,采收前在较高盐度下强化一段时间,可使缢蛏的养殖产量和营养价值得到兼顾。 In order to study the effect of salinity on the composition of fatty acids and sterols, the selection of juvenile Juvenile Scylla serrata was the first to be kept for 10 days under salinity 13 and then cultured for 5 days at salinity 8, 13, 18, 23 Samples were harvested and the juvenile samples were analyzed for fatty acid and sterol composition by gas chromatography-mass spectrometry (GC-MS). The results showed that salinity had no effect on the fatty acids and sterols of Juvenile Sclater, 24 fatty acids and 9 sterols were detected at all salinity levels. High salt significantly inhibited the growth and lipid synthesis of juvenile Scylla serrata. The absolute contents of fatty acids and sterols decreased with the increase of salinity. With the increase of salinity, the composition of polyunsaturated fatty acids with a carbon number of less than 18 showed a decreasing trend, while the polyunsaturated fatty acids with a carbon number of more than 20 The composition is an increasing trend; the same time, the percentage of cholesterol in total sterols increased significantly under high salt stress. Before and after cooking, the changes of fatty acids and sterols were almost the same, while the absolute contents of them all decreased to some extent. The results suggest that if the 缢 生 growth in the lower salinity, harvested before salting at a higher salinity for a period of time, the yield and nutritional value of the 得 得 can be balanced.
