以粮食和蔬菜为主的北京市进城农民工食物消费状况与城镇居民和农村居民存在明显差异,其食物消费结构也许并非是农村居民向城镇居民的简单过渡,而已然演化成区别于这两个群体的新的食物消费结构形态.通过LES模型研究发现,北京市进城农民工食物消费支出系统中,水产品和酒精并不构成食物消费的必需品;主要食物中,边际预算份额从高到低依次为蔬菜、肉禽、粮食、奶和瓜果;蔬菜、奶和瓜果的基本消费支出相互间比例为13.4:1.7:1;肉禽和奶富有弹性,蔬菜接近于水平弹性,而瓜果和粮食则缺乏弹性.
