目的了解武威市某城区餐饮业餐饮具卫生状况。方法采用大肠菌群快速检验纸片法,对甘肃省武威市某城区2012-2013年餐饮单位餐饮具消毒效果进行检测与分析。结果两年共检测该城区餐饮具7 288份,平均合格率为55.7%。市区餐饮店餐饮具消毒质量合格率平均为63.6%,乡镇餐饮单位餐饮具消毒质量合格率平均为44.7%。大中型酒店、普通餐馆和学校幼儿园餐厅等部位餐饮具消毒质量合格率依次为88.7%、55.8%和58.4%。一年四季中,以夏季各餐饮单位餐饮具消毒质量合格率最低。结论所调查的城区餐饮业的餐饮具卫生状况不容乐观,餐饮具消毒质量有待于提高。
Objective To understand the sanitary status of catering equipment in a city of Wuwei City. Methods The rapid test of coliform bacteria was used to detect and analyze the disinfection effect of dining tableware in 2012-2013 in Wuwei city, Gansu province. Results In the two years, a total of 7 288 tableware for the urban area were tested, with an average passing rate of 55.7%. Disinfection of urban restaurants catering quality pass rate averaged 63.6%, township catering units tableware disinfection quality pass rate averaged 44.7%. Disinfection quality of large and medium-sized hotels, ordinary restaurants and kindergartens and restaurants and other parts of the quality of the pass rate of 88.7%, followed by 55.8% and 58.4%. Throughout the year, catering units in summer with the lowest rate of disinfection quality dining tableware. Conclusions The sanitary conditions of tableware in urban catering industry surveyed are not optimistic, and the quality of tableware disinfection needs to be improved.
