在吃的法则里,风味重于一切。中国人从来没有把自己束缚于一个乏味的菜单上。人民怀着对食物的理解,在不断的尝试中寻求着转化的灵感。从北到南的八大菜系,不仅展示着中国千差万别的饮食习惯,也透露着生存智慧的生活文化价值。《美食译苑》是由北京市外办组织编写的一本“官方”准确的中英文菜单,规范了3102个中西餐饮食名称。此次参加翻译的专家不仅有北京外国语大学、清华大学、北京大学等的教授,还邀请了外交部翻译专家、英籍专家、驻外大使等专家顾问参与审校。翻译团队带头人、北京外国语大学教授陈琳表示,菜品翻译力争让完全不懂中华文化的外国宾客一眼就能看懂。作为本书的编辑、出版单位,我们特选择部分内容以飨读者。
In the law of eating, the flavor is more than everything. Chinese never bound themselves to a tedious menu. The people, with their understanding of food, are constantly seeking inspiration for conversion. The eight cuisines from north to south showcase not only the varied eating habits in China, but also the life and cultural values of living wisdom. “Food Court” is an “official” accurate Chinese and English menu prepared by the Beijing Municipal Foreign Affairs Office, regulating the names of 3,102 Chinese and Western food. The experts participating in the translation not only include professors from Beijing Foreign Studies University, Tsinghua University and Peking University, but also invited experts from foreign experts, such as translators, British experts and ambassadors to participate in the revision. Translation team leader Chen Lin, a professor at Beijing Foreign Studies University, said that foreign guests who understand Chinese culture without food translations can understand it at a glance.
