Soy sauce and vinegar are two kinds of condiments most commonly used by ordinary people in the daily life of agricultural products made of agricultural and sideline products. They are essential for people’s home life. They have been produced and consumed in China for thousands of years. At present, there are more than 1,500 manufacturers of soy sauce and vinegar in China, covering all parts of the country. In order to guide consumption and protect the interests of consumers, in the fourth quarter of 1999, the State Bureau of Quality and Technical Supervision carried out national supervision and spot checks on the quality of soy sauce and vinegar products. Among the 48 products produced by 42 companies in the sampled cities of Beijing, Shanghai, Harbin, Chengdu and Guangzhou, 40 were qualified.
