目的了解深圳某区2006-2008年禽肉微生物污染情况,为有效监管提供科学依据。方法在深圳某区两家大型禽肉屠宰加工厂成品库随机抽取7种不同禽肉进行微生物学检测,对检测结果进行统计分析。结果共检测573份样品,总合格率为94.6%。大肠菌群超标率最高为4.4%,其次为沙门菌超标率为0.9%,细菌总数超标率为0.2%。结论大肠菌群是禽肉污染的主要菌种,应加强对禽肉加工过程的控制,同时提高操作人员业务水平和卫生意识,加大行政监督执法力度。
Objective To understand the status of poultry microbial contamination in a certain area of Shenzhen from 2006 to 2008 and to provide a scientific basis for effective supervision. Methods Seven different kinds of poultry meat samples were randomly selected from the finished product warehouse of two large poultry slaughtering and processing plants in a certain area of Shenzhen for the microbiological test. The test results were statistically analyzed. Results A total of 573 samples were tested with a total pass rate of 94.6%. Escherichia coli exceeded the highest rate of 4.4%, followed by Salmonella exceeded the rate of 0.9%, the total number of bacteria exceeding the standard rate of 0.2%. Conclusion The coliform bacteria is the main strain of poultry contamination. The control of poultry processing should be strengthened. At the same time, the operational level and hygiene awareness of operators should be enhanced, and the intensity of administrative supervision and law enforcement should be strengthened.
