在食用菌生产中,往往菌丝发好料而迟迟不能产生子实体,或子实体不能同时全面地产生,为多收获就必须反复数次进行培菌和出菇操作。这不仅影响产菇量还势必拉长了栽培周期,并使结菇管理复杂化。因此,为了使菌丝体更多更快地产生子实体,应给成熟的菌丝体以种种刺激。惊菌“惊菌”是一种古老的刺激方法,早在王桢的“农书”中就有介绍,其操作方法是:用竹扁担、树枝或弹性较强的木板条,对已长满菌丝的培养料进行挤压、拍打和震动(注意不要留痕过多,也不能把培养基弄破碎),这样能使菌丝受到振动而加速运动,从而促使子实体大量迅速分化。这种刺激方法特别适用于香菇、耳类等,对平菇、凤尾菇效果也较好。如佛罗里达平菇,采用振动出菇,生产周期5个多月,生物学效率达121％;而采用一般管理的,生产周期要6个多月,生物学效率只有104％。
