目的为了了解油条食品铝安全,在2015年1~5月期间对吉林市油条摊点及餐厅油条采用多级分层抽样的方法抽样41份。方法按照国家标准GB/T 5009.182—2003《食品中铝的检测》中的方法测定油条中铝含量,依据我国食品添加剂使用卫生标准GB 2760—2011规定评价铝的含量。结果测定值的相对标准偏差(RSD)范围为0.34%~4.20%。41份油条样品来源于街边摊点26份,餐饮店15份;其中有10份样品铝含量超标,8份来源于摊点,2份来源于餐饮店;街边油条摊点油条的铝超标率为30.77%,餐饮店油条铝超标率为13.33%,油条样品铝总超标率为24.39%;41份油条样品中铝含量最大值为250.53 mg/kg。结论吉林市油条中铝含量存在超标现象,建议进一步加强食品安全监管力度。
Purpose In order to understand the safety of fried fritters food aluminum, during the period from January to May 2015, 41 samples of fried fritters and fried fritters in Jilin were sampled by multi-level stratified sampling. Among them, 10 samples contained excessive amounts of aluminum, of which 8 were from stalls and 2 from restaurants. The exceeding rate of aluminum in street fritters was 30.77 %, The exceeding rate of aluminum in restaurant was 13.33%, the total aluminum exceeding standard rate was 24.39%, and the content of aluminum in 41 samples was 250.53 mg / kg. Conclusion There is an excessive content of aluminum in the fritters of Jilin City, and it is suggested to further strengthen the supervision of food safety.
