食物中无机元素含量常因地区环境等条件不同而有明显差异。为评价济宁市食物中某些无机元素的含量,我们测定了70种常用食物中锰、锌、铜、铁和镁的含量。样品采集:粮谷类及干豆类、杂粮、动物性食物、蔬菜类分别采自当地粮所和主要农贸市场的市内产品。随机采样,将各主要市场样品混合后,取适量可食部分作为检测样品。样品处理:凡能洗涤的食物,均经自来水、蒸馏水、高纯水(亚沸蒸馏水)反复冲洗晾干(或烘干至恒重),精确称取2.5g~5g.平行样品两个,置于三角烧瓶内,
The content of inorganic elements in food is often different due to different environmental conditions. To evaluate the content of some inorganic elements in food in Jining, we measured the content of manganese, zinc, copper, iron and magnesium in 70 common foods.
