目的了解乳山市食(饮)具消毒状况,为进一步规范餐饮服务单位卫生监督管理提供科学依据。方法 2012年1—8月,采用大肠菌群快速检测纸片法对乳山市423家餐饮服务场所消毒后备用的食(饮)具进行检测。结果调查423家餐饮服务单位,合格的309家,合格率为73.05%;检测食(饮)具3 666份,合格3 124份,合格率为85.21%。食(饮)具消毒合格率:学校食堂为84.75%,市区饭店为75.92%,乡镇、农村饭店为65.43%,农村聚餐场所为52.63%(P<0.01)。集中消毒的合格率为90.86%,自行消毒的为70.08%(P<0.01);各类食(饮)具消毒合格率:盘子为88.05%,汤匙为87.09%,碗为85.08%,杯子为84.11%,筷子为74.85%。结论乳山市食(饮)具总体消毒合格率较低。应加强乡镇、农村饭店特别是农村聚餐场所食品安全监督管理,提倡使用餐饮具集中消毒单位配送的食(饮)具。
Objective To understand the status of food (drink) disinfection in Rushan City and provide scientific basis for further standardizing the sanitary supervision and management of catering service units. Methods From January to August, 2012, the fasting test of coliform bacteria was used to test the food (drink) after disinfection of 423 food service establishments in Rushan. Results A total of 423 catering service units were investigated, of which 309 were qualified with a pass rate of 73.05%. There were 3,666 servings of food (drink) with 3,124 passes qualified with a pass rate of 85.21%. Food (drinking) with a pass rate of disinfection: school canteens was 84.75%, urban restaurants 75.92%, townships, rural restaurants was 65.43%, rural dining establishments was 52.63% (P <0.01). The qualified rate of centralized disinfection was 90.86%, self-disinfection was 70.08% (P <0.01). The passing rate of all types of food and drink was 88.05%, the spoon was 87.09%, the bowl was 85.08% and the cup was 84.11 %, Chopsticks 74.85%. Conclusion Rushan City food (drink) with a lower overall disinfection pass rate. Should strengthen the township and rural restaurants, especially in rural places for food safety supervision and management, promote the use of tableware disinfection disinfection unit distribution of food (drink) with.
