甘蓝是目前在日本种植很重要的一种叶菜类,虽然其他的甘蓝如无头甘蓝、花椰菜、嫩茎花椰菜和抱子甘蓝等也有栽培,但仅是少量的。甘蓝早在Meiji时代(1868~1913年)已从欧洲传入日本,在那个时代甘蓝的种植渐渐流行起来,然后在Sho-wa时代(1925年)很快地推进到全国各地,因为种植技术不难而且甘蓝比任何其他叶菜更易贮藏和运输。甘蓝叶作为食物说有一种碱性还含有许多有营养的矿物质和维生素。由于这些有用的特性使得甘蓝在日本成为最流行的叶菜。
