胡萝卜素(维生素 A 原):有润滑、强健皮肤的作用,以可防止皮肤干燥,防止糙皮病的发生。含胡萝卜多的蔬菜有:菠菜,每100克食用部分含有3.87毫克,韭菜含3.21毫克,油菜含3.15毫克,胡萝卜含1.35毫克。
