在讲人类或动物的消化生理时;都要提到由口嚥下的食物进入胃中均按入胃的先后成层的排列着。这样先入胃的食物分布在下面,首先与胃壁粘膜接触,受到胃腺分泌的胃液和盐酸的消化作用。而后入胃的食物分布在上面暂时受不到胃液的作用,这样可使食物仍旧保持碱性,便于唾液淀粉酶和食物中所含的酶继续进行消化,以免唾液淀粉酶与酸性的胃液接触而失去作用。
