本文报道以电子自旋共振法研究咖啡因与羟自由基(·OH)的作用。用经典的Fenton反应产生·OH(Fe~(2+)+H_2O→Fe~(3+)+·OH+OH~-)作为·OH的来源,以二甲基吡咯氧化物(DMPO)与·OH形成的加合物的自旋谱来证明咖啡因清除·OH的作用,发现咖啡因能有效地清除·OH,且有明显的剂量效应关系。用其它来源的·OH(Cr(Ⅴ)+H_2O→Cr(Ⅵ)+·OH+OH~-)也得到类似结果。实验肯定了咖啡因阻止DMPO与·OH形成自旋加合物的作用,从而证实了电子自旋共振
In this paper, we study the effect of caffeine and hydroxyl radical (· OH) by electron spin resonance method. Using classical Fenton reaction, · OH (Fe ~ (2 +) + H_2O → Fe ~ (3 +) + · OH + OH ~ -) was used as a source of · OH to react with dimethylpyrrole (DMPO) OH formed adducts to prove the role of caffeine · OH scavenger found caffeine · OH effectively clear, and there is a clear dose-response relationship. Similar results were also obtained with · OH (Cr (Ⅴ) + H_2O → Cr (Ⅵ) + · OH + OH ~ -) from other sources. The experiment confirmed that caffeine prevented the formation of spin adducts between DMPO and · OH, confirming the electron spin resonance
